Geelong Pinot Noir

Shadowfax Geelong Pinot Noir is sourced from the north facing Longest View Vineyard at Geelong. Planted in 1988 it is perched atop a hill overlooking Port Phillip Bay.
The grapes are handpicked and destemmed into small open fermenters. The whole berries are naturally fermented on skins with gentle pump overs once a day for a week.
When pressed the wine is transferred to new and seasoned French oak hogsheads for maturation in the winery's underground cellar. After nine months it is racked and bottled without filtration.
Dark red, Shadowfax Geelong Pinot Noir has charred cherry flavours, grippy tannins and finely balanced acidity. Cellaring potential is seven years.
